I remember one famous writer saying they started out by deciding that if they wrote a short story every week, at least a few of them had to be worth reading :). I think it was Stephen King, but I’m not entirely certain of that.
Personally I find the idea of writing a readable short story in a week pretty daunting, I normally take at least that long to get a first draft done.
